6 ingredient pork and squash is a sweet and savory blend of juicy pork mixed with colorful kabocha squash and green beans sauteed with shoyu and sugar. Serve with a bed of sticky white rice for a scrumptious dinner.

If you’ve been a little nervous to get in the kitchen and cook, then this is the recipe for you. All you need is six simple ingredients and 30 minutes for a delicious home cooked meal.

Speaking of ingredients, you’ll need

  • Cooking oil of choice
  • Pork tenderloin
  • Green beans
  • Kabocha pumpkin
  • Shoyu
  • Sugar

Most simple flavored recipes work well with mild flavored oils. You can use vegetable, canola, or what I like to use is avocado oil. Really any oil with work.

What cut of pork works best for pork and squash?

If you are looking to get dinner on the table quickly, then pork tenderloin is a great cut. All it takes is about 20 minutes for a perfect meal. If budget is more your concern then you could definitely get cheaper cuts of pork like shoulder or butt, however your cook time will increase.

Substitutions

The great thing about this recipe is you can add as many or as little veggies as you’d like. Green beans add a nice pop of color. You can also swap out the kabocha squash with any other squash you’d like.

What is kabocha squash?

Kabocha is a type of squash. It has a hard green skin and a vibrant yellow-orange inside. This squash can be found year round, but has the best flavor in late summer and early fall. It can be cooked with the skin on or removed. The texture is similar to pumpkin and sweet potato. Kabocha has a sweet flavor and is often cooked in stews, soups, and side dishes.

How to store pork and squash?

Once this dish has cooled, place in an airtight container in the refrigerator. This will keep for 3-4 days.

Can you freeze pork and squash?

Along with this recipe being quick and easy, another perk is the freezability. Make a double batch and freeze one for dinner another night. Place in a zip top bag or airtight container and place in the freezer. This will keep for 2-3 months.

How to reheat?

If your pork and squash is frozen, place the refrigerator overnight and allow to defrost. Once defrosted reheat in the microwave or on the stove top.

How to make pork and squash?

  1. Add cooking oil of your choice to a pan set over medium high heat.
  2. To a small bowl add shoyu and sugar. Mix until well combined and set aside.
  3. Add pork to the pan and brown on each side for a few minutes.
  4. Next add shoyu sugar mixture to saute pan and stir to coat.
  5. Saute pork for another 15-20min. Add green beans and kabocha to the pan for the last 5 minutes of cook time and simmer until fork tender. Enjoy!

Ingredients

  • 1 tablespoon cooking oil of choice
  • 1/2 cup shoyu
  • 1/2 cup granulated sugar
  • 1 pound pork tenderloin cubed
  • 1 cup green beans cut in half
  • 2 cups cubed kabocha squash

Instructions

  • Add cooking oil of your choice to a pan set over medium high heat.

*You can substitute the vegetables and squash of your choice.

*Gluten free option: swap out shoyu for tamari sauce.

*You can use a cheaper cut of pork like pork butt, however cooking time will increase.
